Recipe: Fried Chicken Wings

This one is for my fellow chicken lovers... sorry veggies! 

This is a cheeky recipe I stole from Dwayne, but it's so tasty I just had to share it with all of you I'm sure he won't mind! 

First you'll need a large mixing bowl and some plain flour 


Pour a generous amount of flour into the mixing bowl and add salt, garlic salt, black pepper and any mixture of herbs and spices that you desire (I normally add paprika & chicken seasoning to mine), and mix it all together. 




In a separate bowl whisk together 2 medium eggs and a few tablespoons of water to make a smooth eggy mixture. 

Lastly, prep your chicken! I like to use chicken wings but I'm sure this recipe would work with other pieces of chicken too! Wash & clean your chicken using some lemon juice, if you are using wings you will find they'll fry better if you crack the wing in half so that it lays flat. I know it sounds cruel but you'll forget all about it when you bite into the southern fried coating...
Okay, so now this is where you have to start a little production line. So line up your bowls in this order: Raw chicken wings --> eggy mixture --> flour coating --> coated chicken wings. Then dip each chicken wing into each bowl in the same order

*During this time begin to heat a large pot with enough oil to cover half the height of your chicken pieces* 
Allow the oil to get very hot and then add as many chicken wings that can fit on the base of the pan & let them fry. Allow enough time for the coating to be completely fried on onside before turning them over as you will lose the coating on one side. 

From here you have two options really:
1) Allow enough enough time for the both sides of coating to be fully fried and then place on a wire rack into hot oven to ensure that the chicken is fully cooked. This also allows for the coating to become extra crispy. 
2) Cook the chicken wings for long enough in the oil to ensure that the chicken is cooked the whole way through. If you use this method ensure that you turn the wings over continuously so that one side doesn't burn. 

Lastly, place the chicken onto some kitchen towel to soak up any remaining oil & serve!
